Zuppa toscana
Better every day of leftovers.
Ingredients
- 1 pound Italian sausage
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 bunch kale
- 4-5 potatoes, sliced
- 1 quart chicken stock
- 1 quart water
- 1 tsp salt
- ½ tsp pepper
- ¼ tsp red pepper flakes
- 1 pint half and half
Recipe

Put onion, sausage and garlic in a stock pot and brown over medium heat until sausage is cooked through.

In the meantime, wash vegetables, remove ribs from the kale and slice the potatoes.

Add all remaining ingredients except half and half to the pot and cook for 20-30 minutes until potatoes are done.

Add half and half, heat through, and serve.
