Shakshuka

Eggs poached in a spicy tomato and pepper sauce, finished in the oven and served with crusty bread.

  1. Heat oven to 375°F.

  2. Sweat onion and bell pepper in a large skillet. Add garlic and jalapeno. Add spices, salt, and pepper. Cook for a few minutes.

  3. Add tomatoes and simmer until thickened.

  4. Make wells in the sauce and gently crack eggs into them. Transfer pan to oven and cook 7-10 minutes, until eggs are just set.

  5. Toast bread and serve with shakshuka topped with cilantro and feta if desired.
