Orange sauce
a.k.a. "crack sauce"
Ingredients
- 4-12 Chile de Arbol, depending on spice preference
- 6-8 cloves Garlic, divided
- 2 Roma Tomatoes, halved
- 1/2 White Onion, cut into thick rings
- 1/4 cup Apple Cider Vinegar
- 3 tbsp Warm Water
- 1 tsp Salt
- 2 tbsp Lime Juice
- 1/2 cup Vegetable Oil

Roast the tomato and onion until blistered.

In a separate pan, sauté chile de arbol and 2 cloves of garlic until browned and fragrant.

Add the sautéed chiles and garlic to a blender with warm water and vinegar. Let stand for a few minutes to soften the peppers.

Add the roasted tomato, onion, and salt to the blender. Blend until smooth.

With the blender running, slowly drizzle in the oil until the mixture turns a bright orange and emulsifies.

Season to taste with additional salt and lime juice.
This seems like a lot of oil, but it is needed to balance out the heat of the peppers and garlic.
